Sizzling Mutton Stew

Hot moist sizzling meat

Time to revitalize your taste buds with some extra spices with balanced flavors which gives a blast in your mouth and urge you to enjoy every bit of it. My family loved eating it with both flat bread and boiled rice.

Ingredients:

-Mutton 1 kg

-Onion 2 medium sliced

-Tomatoes 2 medium roughly chopped

-Ginger garlic paste 2 tbsp

-Red chili flakes 1 tbsp

-Red chili powder 1 tbsp

-Cumin powder 1 tbsp

-Black pepper crushed 1 tsp

-Green chilies 3-4 chopped

-Salt to taste

-Oil 1/2 cup

Method:

Put the meat in the pressure cooker with all the ingredients together. When the whistle blows, cook approx. 45 minutes. When the meat is tender, remove the lid and cook until oil comes to the surface and all the ingredients mix very well together and a nice consistency is obtained.

Garnish with fresh coriander and green chilies if you like!

Health fact:

A 3-oz. portion of goat meat has 122 calories, which is considerably less than beef’s 179 and chicken’s 162. In terms of fat, goat is much leaner than other, more readily available meats. Goat meat’s 2.6 g of total fat per 3-oz. serving is about one-third of beef’s 7.9 g and roughly half of chicken’s 6.3 g. A serving of goat meat represents just 4 percent of your daily value of total fat, based on a 2,000-calorie diet.

Chili Bombs

Chili Bombs

Flares of taste inside!

Yes the bombastic recipe of my favorite chili!

Try out.

Ingredients:

-Big green chilies 3-4 cut in big chunks and seeded

Sauce:

-Tamarind pulp 1 cup

-Red chilies crushed 1 tbsp

-Black salt a 1/2 tsp

-Coriander crushed 1 tsp

-Cumin crushed 1 tsp

-Salt 1 tsp

For coating:

-Gram flour 1 cup

-Salt 1 tsp

-Red chili powder 1 tsp

 

Method:

Make a tamarind sauce by mixing all ingredients together. Keep it lumpy so that it can stick inside the hollow chili.

Make a thick paste of gram flour to make a coat.

Fill all the chilies with the tamarind sauce and coat in dry gram flour first then the thick coating. Deep fry and enjoy with remaining tamarind sauce!

Health Fact:

Green chilies are rich in vitamins A and C with the dried version higher in vitamin A and the fresh version higher in vitamin C. They can contain as much as six times the amount of vitamin C as a single orange.

Hindustani Pulau ( Pilaf )

Hindustani Pulau

Aroma you can’t ignore!

Ingredients:

-Rice 1/2 kg soaked for 20 minutes

-Kewra essence

-Oil 1 tbsp

For stock:

-Chicken 1kg

-Fennel seeds 4 tbsp

-Coriander seeds 4 tbsp

-Onion medium 1 roughly chopped

-Garlic cloves 4-5

-Water 5 cups

-Salt

Boil chicken with all the above ingredients for about 1 hr on low flame. When chicken is tender, remove from stock and reduce stock by 3-4 cups. Drain and set aside.

Spices:

-Onion 1 medium sliced

-Ginger garlic paste 1tbsp

-Cloves 3

-Black pepper 3

-Green cardamom 2

-Yogurt 1/2 cup

 

Heat oil and fry onion till brown. Add ginger garlic paste, black pepper, cloves, cardamom and finally the cooked chicken. Fry all together until chicken turns light golden brown. Remove the chicken again and set aside. Sprinkle a pinch of orange food color and a tbsp of oil over hot chicken and rub together.

In the above pan with onions and spices, add yogurt and cook well. Add stock and let it boil. Add soaked rice in boiling stock and cook until all the water dries up.

For dum, Add combine chicken with rice, drizzle Kewra essence, sliced ginger and oil over rice, cover and cook in low flame for 10-15 minutes.

 

Kitchen Tip:

To avoid ants in your sugar pot, mix some cloves in it to keep the ants away.

Box Patties

Enjoy a big crunch!

I feel sorry that i couldn’t write for two days, messed up schedule and i thought i would be sharing a great one for this week so i tried this lovely snack, was great fun to make and absolute wonder to eat, its crispness still devouring me with every bite full of my favorite potato filling with vegetables, cheese and shredded chicken. The list can go on as much you like it but i loved making and enjoying it as this one. Check out!

 

Ingredients:

-Thin crust rolling strips 10-12 ( it will yield 5 boxes as you will using two of them)

-Potatoes boiled and mashed 2 cups

-Chicken boiled & shredded 1/2 cup

-Carrots diced 1/4 cup

-Capsicum dices 1/4 cup

-Onion diced 1/4 cup

-Cabbage 1/4 cup thinly shredded

-Mozzarella Cheese shredded 1/4 cup

-Black pepper crushed 2 tbsp

-Chicken powder 1 tsp

-Chili flakes 1 tsp (optional)

-Salt to taste

-Oil 2 tbsp

For sticking paste:

-1 tbsp of flour

-1/2 tsp of water

Method:

Mix together the flour and water to make a thick sticky paste. Adjust the consistency.

Saute vegetables for a minute or two and all ingredients together with seasoning to make a filling. Adjust according to your taste.Remove from flame and mix in cheese well together.

Place two strips together like a plus sign and put a little filling in between. But don’t forget to apply the sticking paste in between of the first strip before placing the other one over it. It will allow it to stick firmly together and won’t break up when deep frying or baking.

Step 1

Cover all sides on by one and apply the paste on each side when wrapping it up.

Step 2

 

At this stage, you can keep them in freezer in a plastic sheet for 2-3 days prior cooking.
Deep fry till golden brown or bake them to desired color. I baked them in 180 degrees C preheated oven for about 10 minutes.

 

Kitchen Tip:

To preserve green peas, keep them in a polythene bag in the freezer.

Lagan K Parathe

Meaty Delight

The festive goes on and i continue to explore more and more traditionalism in my cuisines and daily menu to celebrate every iftar. Yet another effort for something unique and outstanding, these’ lagan k parathe’  will bring you that. Lagan in Urdu means a pan wide broad mouth which is used in this dish. Just take a pizza pan !

Ingredients:

For Parathe:

-Flour 2 cups

-Oil 3-4 tbsp

-Salt 1 tsp

-Water to knead

For Filling:

-Beef Mince 1/2 kg

-Onion diced 1 medium

-Green chilies 2-3 chopped

-Green onions chopped 3-4 tbsp

-Red chili powder 1 tbsp

-Black pepper crushed 1 tbsp

-Soya sauce 1 tbsp

-Salt to taste

-Oil 3-4 tbsp

-Egg 1

Method:

Preheat oven on 180 degrees Celsius.

Knead the flour into a medium soft dough and leave to rest for at least 30 minutes.

Heat oil and fry onions, when transparent add mince and rest of the ingredients. Cook till mince is tender.

Grease the base of your lagan. Now divide the dough into 3 equal portions. Roll each portion into a very thin flat and spread carefully on the lagan.

Place prepared mince filling over this to make a first layer of paratha.

Step 2

Make first layer by spreading filling

Then again place the thin bread over it carefully as it must be very delicate at this stage so you have to be light handed with this.

Step 3

Prepare for the last layer

After placing this one, repeat the above steps to make a second and final layer. You can always add more layers if you like.

Make diagonal cuts with a knife before egg wash. Apply egg wash with a little oil and orange food color beaten with it.

Step 4

Make cuts before baking

Bake for about 15-20 minutes or until golden brown.

Cholay Ki Chaat

The yummy tangy , saucy , and extremely healthy chaat! Will tease your taste buds and tickle with astonishing flavors.

 

Here you go, simple and beautiful

 

Ingredients:

-Chick pea 250 gm

-Onion diced 2 small

-Tamarind juice 3tbsp

-Salt to taste

-Red chili powder 2 tbsp

-Roasted Cumin powder 1 tbsp

-Dry ginger powder 1 tbsp

-Oil 3 tbsp

-Gram flour 2 tbsp

-Green chilies 3-4

Method:

Boil chickpeas until soft. Heat oil and fry onion till transparent. Add boiled chickpeas along with all ingredients except gram flour and tamarind juice. Mix well and cook for a while.  Add gram flour and tamarind juice at the end and mix.

Garnish with green chilies and serve!

Health Fact:

Chickpeas are high in soluble fiber which may lower blood sugar and cholesterol levels

Mocha Date Shake

Mocha Date Shake

Straight from Heaven!

Shakes and drinks are an inevitable part of our Ramadan. It adds up to our festivity and preparations of Iftar time. Date being a mandatory portion of Ramadan diet, has to be on my prior list to create extravagant recipe to cheer empty stomachs after long hours of fasting with a warm welcoming dose. This shake is undoubtedly a gala treat ! and you will  get indulged in it.

Here are the short list you will need:

-Dates 1/2 cup seeded

-Milk 1/2 cup

-Cream 1/4 cup

-Sugar/Brown sugar 2 tbsp

-Crushed ice

-Instant coffee 1 tsp

Method:

Just blend everything together except crushed ice.  Pour in glasses with ice on top as you like!

Enjoy every sip of  it.

Health benefit:

Dates are said to be a part of healthy diet. They consist of sugar, fats, proteins as well as many essential vitamins. If the dates are consumed with the paste of cucumber, one can easily come out from the problem of over-slimming. One kilogram of dates contains almost 3,000 calories. These calories alone are sufficient to meet the daily requirements of a human body.

Bite Surprise!

We are having our Ramadan Festive, and it brings not only health, happiness and blessings but loads of flavors and great appetites to savor and enjoy this holy month with prayers and bounties of Allah. We celebrate this month with all the zeal and passion and prepare our iftar ( time to break the fast ) with delcious devouring recipes that we share with all family and enjoy the feat time. I will be sharing may recipes from today as the time has just started and i am sure you are going to like each and every bit of it.

These filled saucers, as i called them are like filled breads made specifically with minced meat with mushrooms and cheese. You can always make varieties out of them by filling of your choice. But these are super delicious that you won’t allow yourself  to alter 🙂

Ingredients:

For Dough:

-2 cups flour

-20 gms yeast

-bread improve 1 tsp

-salt 1 tsp

-sugar 1/2 tsp

-warm milk to knead

For filling:

-Minced meat ( chicken preferably ) 250 gms

-Cheddar cheese 1 cup

-Mushrooms chopped 1/2 cup

-Onions diced 1/2 cup

-Black pepper 2 tsp

-Salt to taste

-Oil 2 tbsp

-Egg 1

Method:

Preheat oven at 200 degrees Celsius.

Make the bread by kneading all ingredients together and leave to rise. When ferment, roll out the dough flat and cut round shapes to make discs.

Saute onion to transparent in oil, add mince and fry well. When the mince is done, add seasonings and mix well. Combine with cheese and mushrooms.

Place little filling on the little round shapes and cover with another round cut-out and seal with whisked egg.

Apply egg wash on each saucer.

Bake for about 10-20 minutes till nice golden brown.

And they are ready 🙂

 

Health Fact:

Mushrooms can be an ideal low energy diet for diabetics. They have no fats, no cholesterol, very low carbohydrates, high proteins, vitamins and minerals, a lot of water and fiber.
