Summer;s special happiness lies in the cold food we enjoy that gives life to every pore in hot scorching summer heats, salads do this exactly! i am presenting you an easy to make recipe with a special yogurt and cream dressing.

Ingredients:

-Chicken breast 1 boiled and shredded

-Cabbage 2 cups shredded

-Carrots diced 1/2 cup

-Macaroni pasta 1 cup boiled

-Dates 1/4 cup chopped

-Cream 1 cup

-Yogurt 1/4 cup

-Black pepper 2 tbsp

-Sugar 1 tbsp

-Lemon juice 1 tsp

-Salt to taste

Steps:

Combine cream, yogurt, black pepper, sugar and salt with lemon juice together well. Keep in refrigerator for 3o minutes.

In a large bowl combine all the boiled ingredients together and drizzle cold cream dressing , toss, shake and serve!

Lagan K Parathe

Meaty Delight

The festive goes on and i continue to explore more and more traditionalism in my cuisines and daily menu to celebrate every iftar. Yet another effort for something unique and outstanding, these’ lagan k parathe’  will bring you that. Lagan in Urdu means a pan wide broad mouth which is used in this dish. Just take a pizza pan !

Ingredients:

For Parathe:

-Flour 2 cups

-Oil 3-4 tbsp

-Salt 1 tsp

-Water to knead

For Filling:

-Beef Mince 1/2 kg

-Onion diced 1 medium

-Green chilies 2-3 chopped

-Green onions chopped 3-4 tbsp

-Red chili powder 1 tbsp

-Black pepper crushed 1 tbsp

-Soya sauce 1 tbsp

-Salt to taste

-Oil 3-4 tbsp

-Egg 1

Method:

Preheat oven on 180 degrees Celsius.

Knead the flour into a medium soft dough and leave to rest for at least 30 minutes.

Heat oil and fry onions, when transparent add mince and rest of the ingredients. Cook till mince is tender.

Grease the base of your lagan. Now divide the dough into 3 equal portions. Roll each portion into a very thin flat and spread carefully on the lagan.

Place prepared mince filling over this to make a first layer of paratha.

Step 2

Make first layer by spreading filling

Then again place the thin bread over it carefully as it must be very delicate at this stage so you have to be light handed with this.

Step 3

Prepare for the last layer

After placing this one, repeat the above steps to make a second and final layer. You can always add more layers if you like.

Make diagonal cuts with a knife before egg wash. Apply egg wash with a little oil and orange food color beaten with it.

Step 4

Make cuts before baking

Bake for about 15-20 minutes or until golden brown.

Bite Surprise!

We are having our Ramadan Festive, and it brings not only health, happiness and blessings but loads of flavors and great appetites to savor and enjoy this holy month with prayers and bounties of Allah. We celebrate this month with all the zeal and passion and prepare our iftar ( time to break the fast ) with delcious devouring recipes that we share with all family and enjoy the feat time. I will be sharing may recipes from today as the time has just started and i am sure you are going to like each and every bit of it.

These filled saucers, as i called them are like filled breads made specifically with minced meat with mushrooms and cheese. You can always make varieties out of them by filling of your choice. But these are super delicious that you won’t allow yourself  to alter 🙂

Ingredients:

For Dough:

-2 cups flour

-20 gms yeast

-bread improve 1 tsp

-salt 1 tsp

-sugar 1/2 tsp

-warm milk to knead

For filling:

-Minced meat ( chicken preferably ) 250 gms

-Cheddar cheese 1 cup

-Mushrooms chopped 1/2 cup

-Onions diced 1/2 cup

-Black pepper 2 tsp

-Salt to taste

-Oil 2 tbsp

-Egg 1

Method:

Preheat oven at 200 degrees Celsius.

Make the bread by kneading all ingredients together and leave to rise. When ferment, roll out the dough flat and cut round shapes to make discs.

Saute onion to transparent in oil, add mince and fry well. When the mince is done, add seasonings and mix well. Combine with cheese and mushrooms.

Place little filling on the little round shapes and cover with another round cut-out and seal with whisked egg.

Apply egg wash on each saucer.

Bake for about 10-20 minutes till nice golden brown.

And they are ready 🙂

 

Health Fact:

Mushrooms can be an ideal low energy diet for diabetics. They have no fats, no cholesterol, very low carbohydrates, high proteins, vitamins and minerals, a lot of water and fiber.

A super delcious, rich , and delectably sweet pleasure that can’t be ignored!

Note down the ingredients and enjoy every bit of it..

 

Ingredients:

 

-Puff pastry 500gms

-Whipped cream 1 1/2 cups

-Icing sugar 1 cup

-Dry fruits mixed 1/2 cup ( optional )

-Egg 1 for wash.

 

Method:

 

Roll the puff pastry dough into a 1/4inch thick flat. Cut out squares enough to roll onto a cream roll mould which is like a tube broaded at one end. Cover the cut out on it, apply egg wash  and allow it to bake for 10-15 minutes in a preheated hot oven 200 degrees C ). When cooled fill with cream, whipped with icing sugar. Mix with dry fruits if you like.

Mash k Dahi Bare

 

Delicious pleasure for anytime snacks and parties. Can be agreat dinner accompainment and can be served as refreshment to your guests. Very simple and taste is guaranteed all the time.

Ingredients:

-Yogurt 1/2 kg

-Mash ki Daal (White Lentil) 1 cup soaked frr about 6-7 hours or overnight

-Salt 1/2 tsp

-Soda bicarbonate 1 tsp

-Sugar 4-5 tbsp

-Milk powder 2 tbsp

-Cornflour 1/2 tsp

-Chat masala to sprinkle

-Oil to deep fry

Method:

Beat yogurt well with sugar, milk powder and cornflour.Add little water to make it thin.  Grind the soaked lentil to a slight grainy texture and mix soda bicarb and salt. Deep fry till golden brown and immedietely add into the beaten yogurt. Sprinkle with chat masala and serve!

BBQ Chicken Pizza

My favorite fast food of all time and i am sure most of your’s too 🙂 i like  almost all the flavors a pizza can have i just devour its light crisp based bread or a soft one too with lots of vegetables, meat and some extra cheese is a must! In this recipe you will find a BBQ flavor which is another favorite of mine so i combined the two best things together to make it divine 🙂 check it out..

Ingredients for pizza bread dough:

-Flour 2 cups

-Instant dry yeast 11 gms

-Sugar 1 tsp

-Salt 1 tsp

-Olive oil 4-5 tbsps

-Egg 1

-Oregano 1 tsp

Garlic juice/ paste 1 tsp

Method:

Knead the dough by adding all the ingredients together and leave to ferment for 1 hour. When double in size, punch it down twice or thrice and make a flat bread. Bake in a preheated oven (200 degrees C) for about 10 minutes.

Ingredients for tomato sauce:

-Tomatoes 2 medium sized peeled and diced

-Olive oil 2 tbsps

-Red chilli powder 1 tsp

-black pepper 1 tsp

-Green chilli paste 1 tsp

-Oregano 1/2 tsp

-Chilli garlic sauce 2 tbsps

-Salt to taste

Method:

In a sauce pan, add olive oil and tomatoes. Cook until tomatoes are tender. Add rest of the seasonings and cook for a minute.

Ingredients for BBQ Chicken:

-Chicken boneless sliced 1 cup

-Red chilli powder 1 tsp

-Lemon juice 1 tsp

-Oil to fry

-Salt to taste

Method:

Fry chicken pieces in little oil with all the ingredients until chicken is cooked. Heat a coal on a burning stove until red hot. Place it in between the cooked chicken and drop a tsp of oil over it. Cover the pot so all its smoke stay in the chicken for a while. 

Ingredients for topping:

-Chedder cheese 1 cup

-Mozerella cheese 1 cup

-Capsicum diced or rings 6-7

-Onion diced or rings 6-7

-Oregano 1/4 tsp

-Chilli flakes 1/4 tsp

Assembling:

Make marks on the surface of the baked bread with a fork. Apply tomato sauce evenly on the bread then the bbq chicken filling and finally with the vegetables and cheese. Sprinkle oregano and chilli flakes on top before baking to give it an extra kick 😉

Kitchen tip:

Cheese has a finite life. Born at the time of production, a cheese matures to its prime ripeness when its flavor is perfect for eating. Once past its prime, cheese dies. Proper storage and handling can prolong a cheese’s life.

Shakar paare ( sweet crisps )

Very easy, crispy and delicious! For all those who have a sweet tooth and like to munch on their tea time, this is a perfect snack you can’t eat just one!  I made them today for my guests at tea, got a 100 hundred likes so far 🙂 try this you wil find it different.

Ingredients:

-White flour 1 1/2 cups

-Sugar 6-7 tbsps ( you can add more if you like it more sweeter )

-Milk powder 1 tbsp

-Salt a pinch

-Ghee / Butter 6 tbps

-Water to knead

-Oil for deep frying

Method:

Mix all the ingredients into the sifted flour and rub in ghee/ butter together. Knead to a semi-hard dough. Leave it for 30 minutes atleast.

Roll the dough into a thin pastry but not too thin, about 1/4 inch. Cut small squares with knife and deep fry till nice golden brown. Do not heat the oil too much as it might darken the color. Keep it medium.

Serve hot with tea or coffee or just on its own!

Kitchen Tip:

 Place a slice of apple in hardened brown sugar to soften it back up.

Crispy Pakoras

 

I love these! …. sinfully delicious! 😉 great with tea or coffee.

Ingredients:

-Gram flour 1cup

-Mix vegetables, i took potatoes and onions thinly sliced.

-Cornflour 3 tbsps

-Chat Masala 3 tbsps

-Red chilli powder 2 tbsps

-Crushed Corriander seeds 2 tbsps

-Salt to taste

Ajwain (also known as carom, ajowan, or bishop’s weed)

-Oil for deep frying

Method:

Mix all the gredients ain gramfour except oil and veges and leave it for sometime. Mix vegetables right before frying. Deep fry till golden brown. Sprinkle some chat masala on top and serve with sauce of your choice!

 

Kitchen Tip:

 Use a wooden board to chop. It will not blunt the knife. Don`t use a plastic board, small plastic pieces may go with the vegetables.

Cheese Bread Cups

 

Yesterday for a family gathering with kids i selected this recipe as a side snack and everybody enjoyed it alot. It is different , its attracting and very tasty. The bread was so light and nice that even i kept in fridge for  a long time, it was as tasty and soft as freshly baked. Try this for kids or as snacks.

 

Ingredients for dough:

-2 cups white flour

-50 gms butter/margarine

-2 tsps salt

-1/2 cup chedder cheese

-1 tsp salt

-11 gms dry instant yeast

-Warm water to knead

For filling:

-Chedder & Mozerella cheese 1 cup

-Potatoes boiled and mashed 1 cup

-Chicken boiled and shredded 1/2 cup

-Onion 1 small diced

-Black pepper 2 tsp

-Soya sauce 1 tbsp

-Salt to taste

-Oil 2 tbsps

Method:

Knead the dough soft and keep it in a warm environment for about 1 hour to proof.  In the meanwhile prepare the filling by heating oil and add onions, fry a little till transparent. add chicken, black pepper, salt and soya sauce. Fry for a minute and set aside.

When the dough doubles in size, press to escape the air and knead again to flatten it,about 1/4 inch thick. Cur equal sized round shapes, repeat till the dough ends. Grease cupcakes pan and place single round cutting first into the mold then the filling and cheese and cover it with another cutting after applying a little water to its base so that it can stick well together and cover completely.

Bake in preheated oven (200 degrees C) for about 10-15 minutes or until done.

Health Fact:

Cheese can be high in sodium and fat, but it also delivers powerful nutrients. 1-ounce serving can pack up to a third of your daily calcium, plus protein and vitamin D.

Potato and Cheese Kababs

If you have children at home, or you are a cheese lover,  this is a treat for them from me 🙂

Ingredients:

2-3 medium potatoes boiled

-1 cup Chedder Cheese cubes

-1/2 sweet corns

-1 cup chopped mint & corriander leaves

-2-3 green chillies finely chopped

-1 tsp salt

-1 tsp black pepper

-red chilli to taste

– juice of 1 lemon

-1 egg

-Bread crumbs

 

Method:

Mix all ingredients well and make small patties. Coat with egg and then bread crumbs. Pan fry till golden brown.

Serve with tomato sauce. Yummilicious!

 

Health Fact: Since potatoes predominantly contain carbohydrates, they are easy to digest and facilitate digestion. This property makes them a good diet for patients, babies and those who cannot digest hard food but need energy.
