Crispy Pakoras

 

I love these! …. sinfully delicious! ūüėČ great with tea or coffee.

Ingredients:

-Gram flour 1cup

-Mix vegetables, i took potatoes and onions thinly sliced.

-Cornflour 3 tbsps

-Chat Masala 3 tbsps

-Red chilli powder 2 tbsps

-Crushed Corriander seeds 2 tbsps

-Salt to taste

Ajwain (also known as carom, ajowan, or bishop’s weed)

-Oil for deep frying

Method:

Mix all the gredients ain gramfour except oil and veges and leave it for sometime. Mix vegetables right before frying. Deep fry till golden brown. Sprinkle some chat masala on top and serve with sauce of your choice!

 

Kitchen Tip:

 Use a wooden board to chop. It will not blunt the knife. Don`t use a plastic board, small plastic pieces may go with the vegetables.

Cheese Bread Cups

 

Yesterday for a family gathering with kids i selected this recipe as a side snack and everybody enjoyed it alot. It is different , its attracting and very tasty. The bread was so light and nice that even i kept in fridge for  a long time, it was as tasty and soft as freshly baked. Try this for kids or as snacks.

 

Ingredients for dough:

-2 cups white flour

-50 gms butter/margarine

-2 tsps salt

-1/2 cup chedder cheese

-1 tsp salt

-11 gms dry instant yeast

-Warm water to knead

For filling:

-Chedder & Mozerella cheese 1 cup

-Potatoes boiled and mashed 1 cup

-Chicken boiled and shredded 1/2 cup

-Onion 1 small diced

-Black pepper 2 tsp

-Soya sauce 1 tbsp

-Salt to taste

-Oil 2 tbsps

Method:

Knead the dough soft and keep it in a warm environment for about 1 hour to proof.  In the meanwhile prepare the filling by heating oil and add onions, fry a little till transparent. add chicken, black pepper, salt and soya sauce. Fry for a minute and set aside.

When the dough doubles in size, press to escape the air and knead again to flatten it,about 1/4 inch thick. Cur equal sized round shapes, repeat till the dough ends. Grease cupcakes pan and place single round cutting first into the mold then the filling and cheese and cover it with another cutting after applying a little water to its base so that it can stick well together and cover completely.

Bake in preheated oven (200 degrees C) for about 10-15 minutes or until done.

White chicken curry roast

 

Yesterday i tried this recipe at home and its more than delicious and simply mouth watering. I couldn’t help my self to eat more than usual and all the family members enjoyed too much and i recommend that you¬†should definetely¬†try this at home that¬†i am sure¬†you will find it differnet and yummy too. ¬†It is best served with naan or bread. Plain boiled rice also tastes good with it.

Ingredients:

-Chicken 1 kg

-Onion 3-4 medium cubed

-Green chillies 10-12 chopped

-Yogurt 1/2 kg

-Soya sauce 2 tbsps

-Juice of 2 lemons

-Garlic roughly crushed 4 cloves

-Ginger 1 small piece roughly chopped

-Vinegar 1 1/2 tbsps

-Cumin powder 1 tbsp

-Corriander powder 1 1/2 tbsps

-Garam Masala 1/2 tsps

-Salt

-Oil 1 cup

Method:

heat oil and fry onions till transparent. Add crushed garlic and ginger. Fry a little and add chicken and cook until white in color. Add green chillies and cook well on high flame. Meanwhile, add soya sauce, vinegar, cumin powder, corriander powder and yogurt. Cook for 5-10 minutes. If the chicken it not done, then add a little water and cover and cook. Garnish with fried potato crisps, fresh corriander and boiled egg.

 

Health benefit:

Yogurt can boost immunity. Researchers who studied 68 people who ate two cups of live-culture yogurt daily for three months found that these persons produced higher levels of immunity boosting interferon. The bacterial cultures in yogurt have also been shown to stimulate infection-fighting white cells in the bloodstream.

Shahi Mutton Pasanda ( curried steaks)

 

Absolute delight to share this recipe. My family favorite and irresistably good. Do try and you will be adding a new favorite to your list.  

Ingredients:

-1 kg steaked mutton meat, about 1/4 inch or less thick

-100 gms Sesame seeds

-Nutmeg, Mace, Cloves, Green cardemom Рtake in equal quantity of each and crush to powder, it should be 100gms altogether.

-100 gms Poppy seeds

-100 gms dessicated coconut

-9-10 Almonds

-9-10 Peanuts

-1 onion, thinly sliced and browned

-100 gms ginger garlic paste

-1/2 tsp turmeric powder

-250 gms yogurt

-1/2 bunch of fresh corriander leaves

– 4-5 mint leaves

-6 green chillies paste

– 1 tsp cruched black pepper

-Ghee 1 cup

-Salt to taste

-1 cup water

Method:

The meat should be like this:

On a hot plate (tawa), dry roast sesame, poppy, almond. peanuts and coconut a while. Wash the pasande (steaks) and marinate with all the spices. Leave for 1 1/2 hours in fridge.

In a pan, add the marinated mutton with water and allow it to cook on low heat until done. Pour ghee in the meat and cook on medium high flame till excess water dries up and its ready!

Health Tip:

High levels of cholesterol in your blood raise your risk for heart disease, and a benefit of goat meat is that it has less than 1 g cholesterol-raising saturated fat per 100 g serving.

Hyderabadi Tala Hoa Gosht (Spicy Fried Meat)

 

I am presenting you another supreme and very traditional meat dish from Hyderabad. It’s so popular that we used to make it in every family get togethers and parties. It has a distinguishing taste yet every body just loves it and ask for more..

Hope you like it..

Ingredients:

– 1/2 kg boneless meat (preferrably lamb )cut into cubes

-1 tbsp garlic paste

-1/2 tbsp ginger paste

-1/2 tbsp red chilli powder

– 1 tsp turmeric powder

-2 tsps casia buds powder ( cinammon)

-1/2 tsp meat tenderizer

-4 tbsps oil

-Few mint leaves

-Salt to taste

Method:

Mix all ingredents in meat except oil and marinate for atleast two hours.

Fry the meat by adding little water till tender. Garnish with mint leaves and serve!

Easy isn’t it? but extremely delicious…

Potato and Cheese Kababs

If you have children at home,¬†or you are a cheese lover, ¬†this is a treat for them from me ūüôā

Ingredients:

2-3 medium potatoes boiled

-1 cup Chedder Cheese cubes

-1/2 sweet corns

-1 cup chopped mint & corriander leaves

-2-3 green chillies finely chopped

-1 tsp salt

-1 tsp black pepper

-red chilli to taste

– juice of 1 lemon

-1 egg

-Bread crumbs

 

Method:

Mix all ingredients well and make small patties. Coat with egg and then bread crumbs. Pan fry till golden brown.

Serve with tomato sauce. Yummilicious!

 

Health Fact: Since potatoes predominantly contain carbohydrates, they are easy to digest and facilitate digestion. This property makes them a good diet for patients, babies and those who cannot digest hard food but need energy.

Ras Malai

A mouth-watering dessert. It just melts in mouth with refreshingly pleasing sweetness that is abolutely a divine thing to have. The simplicity of this dish enhance its popularity among sub-continent desserts and it’s definitely a treat that can be served in your family occassions and dinner parties.

Ingredients for malai balls:

-1 cup full cream powedered milk

-1 egg

-1 tsp oil

-1 tsp baking powder

For Syrup:

-1 litre milk

-6 tbsps sugar

-1 green cardemom

-1 tbsp chopped pistachios

-1/2 Kewra essence or rose water

 

Method:

Mix togethere the ingredients into a dough and divide into small ovals/malai balls, slightly flattened the ovals. Boil the milk with sugar and cardemom seeds. When it starts to boil add the malai balls (ovals)  and let them swelll. Lower the heat and cook for 10 minutes. Just before removing from the heat , add Kewra essence / rose water. Garnish this tradional delicacy with chopped pistachios. Serve chilled.

This can also be flavored with saffron. Just add a few strings of saffron with the cardemom.

Mexican Spicy Fish Manchurian

Mexican food has my know my taste buds. I not only enjoy cooking mexican food but its one of my favorite cuisine as well. I am seafood fan as well. So this is a perfect combination for all those seafood lovers who wants to spice things up! I am sure you are going to devour it.

Ingredients:

-Fish Fillet thinkly sliced

-Peas 1/4 cup

-Carrots 1/4 cup chopped

-Capsicum 1/ 4 cup chopped

-Onion 1 medium chopped

-Garlic 4-5 cloves

-Mushrooms 7-8 chopped

-Juice of 1 lemon

-Chilli paste 3-4 tbsps

-Salt to taste

-Cornflour 2 tsp

-Green chillies chopped 4-5

-Cihcken powder 1 tsp

-Chilli garlic sauce 2 tbsps

-Tomato Ketchup 2 tbsps

-Flour for coating fish

-Oil for frying

Method:

Marinate fish with lemon juice, salt and chilli paste and keep it aside. In a pan, heat oil. Coat marinated fish in flour and fry till color changes.

Prepare for sauce by frying garlic, chilli garlic sauce, tomato ketchup, water, chilli paste together for a few minutes. Add chicken powder. Mex weel and add lemon juice and green chillies. Mix corn flour in little water and add to the bioling sauce cook until thick or you get the desired consistency. Fry vegetables in little oil with salt. Assemble fish fillet and sauce together in a platter. Add vegetables on top and garnish with julian cut ginger, spring onion and fresh corriander if you like.

Irresistable Tomato Achar (Pickle)

It is perhaps the most easiest and tastiest recipe i am sharing with you. It’s a great accompainment with plain boiled rice, meat curries or just enjoy it with chapati or bread. It has¬†a great tangy & spicy flavor that¬†is simply do wonders on your tastebuds!¬†

Ingredients:

-Tomatoes 2 kgs peeled and seeded

-Green chillies 15-20 whole

-Cumin seeds 2 tbsps

-Corriander seeds 3 tbsps

-Fenugreek seeds 1 tsp

-Red chillie powder 3 tbsps

-Salt 2 tbsps or to taste

 -Oil 1/2 cup for baghar

Method:

Take a large pan and add tomatoes with green chillies ( remove its stems only ). Let it cook until all the water of tomatoes dries completely. Make sure theres no water left before adding any seasonings to it as there will be chances for it to get rotten quickly with moisture.

When it becomes dry and thick, turn off heat and cool completely.

On a hot plate, roast cumin and corriander seeds for a while and grind them to fine powder.

Take a pan add oil, add fenugreek seeds, roasted and grinded spices, red chilli powder and salt. Fry these for a while. Add into the cooked tomatoes and chillies. Mix well and taste !! you are going to rejoice..as i did when i tasted.

 

Health Benefit:

Tomatoes are one of the low calorie vegetables containing just 18 calories per 100 g. They are also very low in any fat contents and have zero cholesterol levels. Nonetheless, they are excellent sources of antioxidants, dietary fiber, minerals, and vitamins. Because of their all-round qualities, dieticians and nutritionists often recommend them to be included in cholesterol controlling and weight reduction programs.

Rich Double ka meetha

Rich Double Ka Meetha

Mouthwatering dessert

This is the dessert ican’t say no to make or eat ! I like it extra rich with lots of creamy milk and khoya with lots of roasted nuts. You are going to add this to your favorites. I bet…

Ingredients:

Bread slices 6-7 cut in diagonals. Preferrably stale bread.

-Milk 3 cups

-Sugar 1 cup

-Almonds, Pistachios, Cashews roasted and roughly chopped

-Khoya 400 gm

-Cream 3 tbsps

-Saffron few strands

-Silver foil (vark)

-Ghee for deep frying

Method:

Cut the sides of the bread, its optional if you like hard corners that turns crispy. Deep fry them in ghee till light golden brown.

Take a pan and cook milk with sugarand saffron until it reduces to half. It has to be thicker. Add cream when and mix. Pour onto the bread slices and leave it to soak. Sprinkle with roasted nuts and garnish with khoya and silver foil.

Viola!

Kitchen Tip:

To remove the skin of almonds easily, soak them in hot water for 15-20 minutes.
