Cold Chicken Salad

Summer;s special happiness lies in the cold food we enjoy that gives life to every pore in hot scorching summer heats, salads do this exactly! i am presenting you an easy to make recipe with a special yogurt and cream dressing.

Ingredients:

-Chicken breast 1 boiled and shredded

-Cabbage 2 cups shredded

-Carrots diced 1/2 cup

-Macaroni pasta 1 cup boiled

-Dates 1/4 cup chopped

-Cream 1 cup

-Yogurt 1/4 cup

-Black pepper 2 tbsp

-Sugar 1 tbsp

-Lemon juice 1 tsp

-Salt to taste

Steps:

Combine cream, yogurt, black pepper, sugar and salt with lemon juice together well. Keep in refrigerator for 3o minutes.

In a large bowl combine all the boiled ingredients together and drizzle cold cream dressing , toss, shake and serve!

Antioxidants are substances that help protect the body from damage caused by harmful molecules called free radicals.

Hindustani Pulau ( Pilaf )

Hindustani Pulau

Aroma you can’t ignore!

Ingredients:

-Rice 1/2 kg soaked for 20 minutes

-Kewra essence

-Oil 1 tbsp

For stock:

-Chicken 1kg

-Fennel seeds 4 tbsp

-Coriander seeds 4 tbsp

-Onion medium 1 roughly chopped

-Garlic cloves 4-5

-Water 5 cups

-Salt

Boil chicken with all the above ingredients for about 1 hr on low flame. When chicken is tender, remove from stock and reduce stock by 3-4 cups. Drain and set aside.

Spices:

-Onion 1 medium sliced

-Ginger garlic paste 1tbsp

-Cloves 3

-Black pepper 3

-Green cardamom 2

-Yogurt 1/2 cup

 

Heat oil and fry onion till brown. Add ginger garlic paste, black pepper, cloves, cardamom and finally the cooked chicken. Fry all together until chicken turns light golden brown. Remove the chicken again and set aside. Sprinkle a pinch of orange food color and a tbsp of oil over hot chicken and rub together.

In the above pan with onions and spices, add yogurt and cook well. Add stock and let it boil. Add soaked rice in boiling stock and cook until all the water dries up.

For dum, Add combine chicken with rice, drizzle Kewra essence, sliced ginger and oil over rice, cover and cook in low flame for 10-15 minutes.

 

Kitchen Tip:

To avoid ants in your sugar pot, mix some cloves in it to keep the ants away.

Box Patties

Enjoy a big crunch!

I feel sorry that i couldn’t write for two days, messed up schedule and i thought i would be sharing a great one for this week so i tried this lovely snack, was great fun to make and absolute wonder to eat, its crispness still devouring me with every bite full of my favorite potato filling with vegetables, cheese and shredded chicken. The list can go on as much you like it but i loved making and enjoying it as this one. Check out!

 

Ingredients:

-Thin crust rolling strips 10-12 ( it will yield 5 boxes as you will using two of them)

-Potatoes boiled and mashed 2 cups

-Chicken boiled & shredded 1/2 cup

-Carrots diced 1/4 cup

-Capsicum dices 1/4 cup

-Onion diced 1/4 cup

-Cabbage 1/4 cup thinly shredded

-Mozzarella Cheese shredded 1/4 cup

-Black pepper crushed 2 tbsp

-Chicken powder 1 tsp

-Chili flakes 1 tsp (optional)

-Salt to taste

-Oil 2 tbsp

For sticking paste:

-1 tbsp of flour

-1/2 tsp of water

Method:

Mix together the flour and water to make a thick sticky paste. Adjust the consistency.

Saute vegetables for a minute or two and all ingredients together with seasoning to make a filling. Adjust according to your taste.Remove from flame and mix in cheese well together.

Place two strips together like a plus sign and put a little filling in between. But don’t forget to apply the sticking paste in between of the first strip before placing the other one over it. It will allow it to stick firmly together and won’t break up when deep frying or baking.

Step 1

Cover all sides on by one and apply the paste on each side when wrapping it up.

Step 2

 

At this stage, you can keep them in freezer in a plastic sheet for 2-3 days prior cooking.
Deep fry till golden brown or bake them to desired color. I baked them in 180 degrees C preheated oven for about 10 minutes.

 

Kitchen Tip:

To preserve green peas, keep them in a polythene bag in the freezer.

Bite Surprise!

We are having our Ramadan Festive, and it brings not only health, happiness and blessings but loads of flavors and great appetites to savor and enjoy this holy month with prayers and bounties of Allah. We celebrate this month with all the zeal and passion and prepare our iftar ( time to break the fast ) with delcious devouring recipes that we share with all family and enjoy the feat time. I will be sharing may recipes from today as the time has just started and i am sure you are going to like each and every bit of it.

These filled saucers, as i called them are like filled breads made specifically with minced meat with mushrooms and cheese. You can always make varieties out of them by filling of your choice. But these are super delicious that you won’t allow yourself  to alter 🙂

Ingredients:

For Dough:

-2 cups flour

-20 gms yeast

-bread improve 1 tsp

-salt 1 tsp

-sugar 1/2 tsp

-warm milk to knead

For filling:

-Minced meat ( chicken preferably ) 250 gms

-Cheddar cheese 1 cup

-Mushrooms chopped 1/2 cup

-Onions diced 1/2 cup

-Black pepper 2 tsp

-Salt to taste

-Oil 2 tbsp

-Egg 1

Method:

Preheat oven at 200 degrees Celsius.

Make the bread by kneading all ingredients together and leave to rise. When ferment, roll out the dough flat and cut round shapes to make discs.

Saute onion to transparent in oil, add mince and fry well. When the mince is done, add seasonings and mix well. Combine with cheese and mushrooms.

Place little filling on the little round shapes and cover with another round cut-out and seal with whisked egg.

Apply egg wash on each saucer.

Bake for about 10-20 minutes till nice golden brown.

And they are ready 🙂

Mushrooms can be an ideal low energy diet for diabetics. They have no fats, no cholesterol, very low carbohydrates, high proteins, vitamins and minerals, a lot of water and fiber.

Mixed Spicy Rice

Rice are not only a great source of energy and carbohydrates that adds up to your daily diet but its also a great cooking choice with lots of variations and styles, the way you want it. This recipe is very different and you just have to assemble it together and when you eat, a blast of flavors will run into your mouth with a yummy effect altogether ! so you have to enjoy this one..

Ingredients:

For Stalk:

-Garlic 2 cloves

-Carrots 1 small chopped

-Onions 1 small cubed

-Whole black pepper 4-5

-Salt 2 tsp

Green Sauce:

-Fresh Coriander 2 bunches

-Mint leaves 1/2 bunch

-Green chilies 2-3

-Salt to taste

-Lemon juice 1 tbsp

Mix Topping:

-Chicken boneless 1/2 cup cubed ( marinated with black pepper, salt, vinegar and baking powder)

-Potatoes 1/2 cup cubed

-Capsicum 1/2 cup cubed

-Tomato 1/2 cup

-Cabbage 1/2 cup

-Oil 1/2 cup

 

Method:

Boil rice in stalk ingredients until well done. Fry marinated chicken until cooked, add vegetables and saute for a while. Add a little salt at this stage to keep vegetables crisp.

Grind ingredients for green sauce and squeeze lemon juice at the end.

Now assemble all of the prepared items on a bed of boiled rice. Drizzle green sauce over top and enjoy all its refreshing flavors!

 

Health Fact:

High Blood Pressure: As rice is low in sodium, it is considered best food for those suffering from high blood pressure and hypertension.

Chicken Potato Curry

 

Chicken Potato Curry

So rich in flavors !

For a basic curry that is most popular in our cuisine, it requires to have a peculiar taste with aroma which is obtained after following a certain procedure of cooking curry, that we call “Qorma’ , which is extremely popular and favorite. However this curry contains that flavor of qorma but its a bit lighter version with potatoes in it. Which makes it even more delicious and fulfilling.

Ingredients:

-Chicken 1 kg

-Onions 2 medium sliced

-Yogurt 1 1/2 cups

-Potatoes 2 medium quartered

-Red chili powder 2 tbsp

-Turmeric powder 1 tsp

-Whole black pepper 3-4

-Ginger Garlic paste 1 tbsp

-Nutmeg & Mace 1/2 tsp crushed

-Kewra essence / Rose water 1 tsp

-Oil 2/3 cup

Method:

Heat oil and fry chicken with ginger garlic paste until it turns white and keep aside. Fry onion till brown. Drain from oil and beat in a blender with yogurt. Again pour this gravy in the saucepan and add fried chicken, potatoes and all the spices except nutmeg, mace and kewra essence. Cook covered until chicken and potatoes are done. You can add little water for cooking if desired.

Allow excess water to evaporate and finally add nutmeg, mace and kewra essence. These will give your gravy that special aroma of a qorma which you will never forget ! simmer on low flame until oil comes at the surface.

Garnish with green chilies.

Serve with boiled rice or bread.

 

Kitchen Tip:

 Black pepper, garlic powder, salt and cayenne pepper are excellent
 “after cooking” seasonings. Allow guests to season dishes with these
 spices at the table.

Chicken Do Piyaza

Saucy and succulent!

 

As its name calls it, ‘do piyaza’ means double the onion quantity in comparison to a normal chicken or meat gravy mixed with tomatoes and spices. The doubled amount of onions makes it more juicy and and flavorful.  This recipe can also be altered with red meat.

 

Ingredients:

-Chicken 1 kg

-Onion 3-4 cubed

-Tomato 4-5

-Green chillies 6-7

-Ginger garlic paste 1 1/2 tbsp

-Red chilli powder 1 tbsp

-Turmeric powder 1/2 tsp

-Salt to taste

-Oil 1/2 cup

 

Method:

-Heat oil and fry chicken in it with half of green chillies,when it turns white add ginger garlic paste, red chilli powder, turmeric powder and salt. Fry well until all the ingredients combine well. Add cubed onions and tomatoes and cook covered until chicken is done. The onions in this recipe will be crispier and not soft, this is the difference, it will give it a specific look and taste that you will enjoy.

Garnish with ginger cut in Julian and remaning green chillies.

 

Kitchen Tip:

To easily remove burnt-on food from your skillet, simply add a drop or two of dish soap and enough water to cover bottom of pan, and bring to a boil on stovetop-skillet will be much easier to clean.

BBQ Chicken Pizza

My favorite fast food of all time and i am sure most of your’s too 🙂 i like  almost all the flavors a pizza can have i just devour its light crisp based bread or a soft one too with lots of vegetables, meat and some extra cheese is a must! In this recipe you will find a BBQ flavor which is another favorite of mine so i combined the two best things together to make it divine 🙂 check it out..

Ingredients for pizza bread dough:

-Flour 2 cups

-Instant dry yeast 11 gms

-Sugar 1 tsp

-Salt 1 tsp

-Olive oil 4-5 tbsps

-Egg 1

-Oregano 1 tsp

Garlic juice/ paste 1 tsp

Method:

Knead the dough by adding all the ingredients together and leave to ferment for 1 hour. When double in size, punch it down twice or thrice and make a flat bread. Bake in a preheated oven (200 degrees C) for about 10 minutes.

Ingredients for tomato sauce:

-Tomatoes 2 medium sized peeled and diced

-Olive oil 2 tbsps

-Red chilli powder 1 tsp

-black pepper 1 tsp

-Green chilli paste 1 tsp

-Oregano 1/2 tsp

-Chilli garlic sauce 2 tbsps

-Salt to taste

Method:

In a sauce pan, add olive oil and tomatoes. Cook until tomatoes are tender. Add rest of the seasonings and cook for a minute.

Ingredients for BBQ Chicken:

-Chicken boneless sliced 1 cup

-Red chilli powder 1 tsp

-Lemon juice 1 tsp

-Oil to fry

-Salt to taste

Method:

Fry chicken pieces in little oil with all the ingredients until chicken is cooked. Heat a coal on a burning stove until red hot. Place it in between the cooked chicken and drop a tsp of oil over it. Cover the pot so all its smoke stay in the chicken for a while. 

Ingredients for topping:

-Chedder cheese 1 cup

-Mozerella cheese 1 cup

-Capsicum diced or rings 6-7

-Onion diced or rings 6-7

-Oregano 1/4 tsp

-Chilli flakes 1/4 tsp

Assembling:

Make marks on the surface of the baked bread with a fork. Apply tomato sauce evenly on the bread then the bbq chicken filling and finally with the vegetables and cheese. Sprinkle oregano and chilli flakes on top before baking to give it an extra kick 😉

Cheese has a finite life. Born at the time of production, a cheese matures to its prime ripeness when its flavor is perfect for eating. Once past its prime, cheese dies. Proper storage and handling can prolong a cheese’s life.

White chicken curry roast

 

Yesterday i tried this recipe at home and its more than delicious and simply mouth watering. I couldn’t help my self to eat more than usual and all the family members enjoyed too much and i recommend that you should definetely try this at home that i am sure you will find it differnet and yummy too.  It is best served with naan or bread. Plain boiled rice also tastes good with it.

Ingredients:

-Chicken 1 kg

-Onion 3-4 medium cubed

-Green chillies 10-12 chopped

-Yogurt 1/2 kg

-Soya sauce 2 tbsps

-Juice of 2 lemons

-Garlic roughly crushed 4 cloves

-Ginger 1 small piece roughly chopped

-Vinegar 1 1/2 tbsps

-Cumin powder 1 tbsp

-Corriander powder 1 1/2 tbsps

-Garam Masala 1/2 tsps

-Salt

-Oil 1 cup

Method:

heat oil and fry onions till transparent. Add crushed garlic and ginger. Fry a little and add chicken and cook until white in color. Add green chillies and cook well on high flame. Meanwhile, add soya sauce, vinegar, cumin powder, corriander powder and yogurt. Cook for 5-10 minutes. If the chicken it not done, then add a little water and cover and cook. Garnish with fried potato crisps, fresh corriander and boiled egg.

 

Health benefit:

Yogurt can boost immunity. Researchers who studied 68 people who ate two cups of live-culture yogurt daily for three months found that these persons produced higher levels of immunity boosting interferon. The bacterial cultures in yogurt have also been shown to stimulate infection-fighting white cells in the bloodstream.
