Stir-fried Noodles with BBQ Sauce

Tempting & Healthy !

This is so yummy that you just can’t say no to this! and it’s good for your tummy as well, having lots of vegetables!

 

Ingredients:

-Noodles 200 gms

-Capsicum 1/4 cup

-Carrots 1/4 cup

-Cabbage 1/4 cup

-Onion 1 small

-Tomato 1 small

-Garlic chopped

-Chilli garlic sauce 1 tbsp

-Tomato Ketchup 1 tbsp

-Brown Sugar 1/2 tsp

-Soya sauce 2 tbsps

-Vinegar 1 tsp

-Chicken cube 1

-Salt to taste

-Oil 4 tbsps

 

Method:

Boil noodles with a tbsp of oil and salt for 5-10 minutes. Pass cold water through boiled noodles and set aside.

Heat oil in a wok in fry garlic a minute, then add onions and fry on high flame, keep adding all the veges one by one and fry for couple of minutes. Add ketchup, chilli garlic sauce, chicken cube, soya sauce, vinegar and brown sugar and fry. Add boiled noodles and keep tossing on high flame until well combined. Serve hot!

 

Health fact:

Eat at least 5-7 servings of fresh vegetables every day. Seasonal vegetables should be encouraged. Include variety in vegetable type and color in your diet. Yellow and orange color vegetables are rich in Vitamin A, α and β carotenes, zea-xanthins and crypto-xanthins, where as dark green vegetables are very good source of minerals and phenolic flavonoid anti-oxidants.

Irresistable Tomato Achar (Pickle)

It is perhaps the most easiest and tastiest recipe i am sharing with you. It’s a great accompainment with plain boiled rice, meat curries or just enjoy it with chapati or bread. It has a great tangy & spicy flavor that is simply do wonders on your tastebuds! 

Ingredients:

-Tomatoes 2 kgs peeled and seeded

-Green chillies 15-20 whole

-Cumin seeds 2 tbsps

-Corriander seeds 3 tbsps

-Fenugreek seeds 1 tsp

-Red chillie powder 3 tbsps

-Salt 2 tbsps or to taste

 -Oil 1/2 cup for baghar

Method:

Take a large pan and add tomatoes with green chillies ( remove its stems only ). Let it cook until all the water of tomatoes dries completely. Make sure theres no water left before adding any seasonings to it as there will be chances for it to get rotten quickly with moisture.

When it becomes dry and thick, turn off heat and cool completely.

On a hot plate, roast cumin and corriander seeds for a while and grind them to fine powder.

Take a pan add oil, add fenugreek seeds, roasted and grinded spices, red chilli powder and salt. Fry these for a while. Add into the cooked tomatoes and chillies. Mix well and taste !! you are going to rejoice..as i did when i tasted.

Tomatoes are one of the low calorie vegetables containing just 18 calories per 100 g. They are also very low in any fat contents and have zero cholesterol levels. Nonetheless, they are excellent sources of antioxidants, dietary fiber, minerals, and vitamins. Because of their all-round qualities, dieticians and nutritionists often recommend them to be included in cholesterol controlling and weight reduction programs.
