Masala Dosa

The very famous masala dosa! This is an authenticate fool proof recipe. Personally tried and turned out to be perfect in taste and texture both. It’s not an easy task to make a crisp dosa at home perfectly, however it requires both your cooking skills and a good batter too.

Ingredients for Dosa:

-White Lenttil ( Mash) 1 cup

-Rice 4 cups

-Fenugreek seeds 1 tsp

-Salt 2 tsp

-Cooked rice 1 tbsp

-Small onion paste.

Steps:

-Soak the lentil and rice together with fenugreek seeds and leave it overnight. Normally it requires 12 hours for the first ferment.

-Blend to a thick paste. Add onion paste, salt and leave it to ferment for another 8 hours.

-Add water according to the consistency of the batter. It should not be too runny or too thick. It should have the right consistency so that it can spread on a flat pan (tawa) easily.

-Make crisp dosa by cooking quickly on a heated flat tawa and cool before filling it.

Ingredients for Masala Filling:

-Boiled mashed potatoes 3-4 cups

-Curry leaves 6-8

-Green Chillies fine chopped 4-5

-Onion fine chopped 3 medium

-Turmeric powder 1tsp

-Musturd seeds 1tsp

-Salt to taste

-Oil

Method:

-Heat oil in a pan and add poppy seeds, curry leaves and pop for some seconds. Add onions anf fry till transparent.

-Add little oil , cover and cook until onion becomes tender. Add green chillies. Mix well. 

-Add potatoes salt and turmeric powder

Your masala filling is ready.

Serve immediately !  with coconut chutney

and here is the recipe of Coconut chutney..

-Coconut 2 cups

-Garlic 1 big clove

-Green chillies 3-4

-Salt to taste

Blend together all these ingredients by adding little water.

Give baghar with poppy seeds, curry leaves and whole red pepper.
